Who's behind it

Smits is a Dutch family business entirely dedicated to slicing onion for hospitality. The company processes Dutch onions and supplies kitchens, foodservice and industry. In 2024 Smits merged with Mol Fresh Food. Together they bring over 150 years of onion processing experience. Smits covers the largest part of the sliced onion market; Mol added the cleaned, whole onion. Director is Johan Otto. The premise stayed the same: slice the onion exactly as the kitchen wants it, so you don't have to do that work.

What really sets it apart

Smits combines cutting and sorting machinery with people who know onion. That delivers a product uniform in shape and batch after batch the same texture and taste. No bags with too coarse and too fine mixed through. The onions are one hundred per cent natural, without additives, and last eleven days. Order today and it's in the kitchen tomorrow; deliveries go within 24 hours. For an unexpected big order, a wedding or a full terrace, that's the difference between being able to deliver or not.

Do the maths. A cook slicing kilos of onion daily is already losing half an hour to it, plus tears, plus trim waste that you buy but throw away. With pre-sliced onion that's gone. No waste, no labour on a task no chef enjoys, and consistent size you can calibrate your cooking time to.

How to set yourself apart with this

Put the consistent size to your advantage. Finely chopped onion that's uniform throughout colours evenly when you confit it or stew it to compote. Rings of equal thickness fry crispy in the same time, without thin ones burning while thick ones stay pale. Want character on the plate, choose red onion or shallot in the same cut. And the time you win you don't stick in a drawer, you put into the things your guest actually tastes: your stock, your sauce, your finish. The onion is simply good, every service again.

Chef’s tip

Use the consistent size. Finely chopped onion that's uniform throughout colours evenly when you confit it to compote, and rings of equal thickness fry all crispy in the same time.
