Who's behind it

Prince de Bretagne isn't a single farmβ€”it's a brand of growers. Behind the name sit around 1,700 vegetable growers on the north coast of Brittany, united in three cooperatives that have sold under one flag since 1970. The territory is a strip roughly 45 kilometres wide along the Atlantic coast, from Brest past Saint-Malo.

Sales happen through the clock auction. Since 1961, vegetables have been centrally auctioned in three halls, then move quickly to buyers. That system explains the breadth of range and consistent quality: hundreds of growers supply under the same standard, and the cooperative steers on sorting and fresh supply. For you, it means you're not dependent on one field or one harvest.

What truly sets them apart

The climate does the work. The north coast of Brittany has mild winters, constant air humidity and salty sea air. Because of this, vegetables grow in open field slowly and steadily, even outside peak season. You taste that in the structure: cauliflower with body, leek with length and flavour, artichoke that's firm all the way to the heart.

The range is the second strength. Prince de Bretagne carries 141 vegetable varieties, over sixty organic, and is France's largest organic vegetable group. Cauliflower, artichoke, leek and shallot form the backbone, but the coastal region also yields seaweed: salted wakame and sea lettuce that come from the same water where the vegetables grow. That blend of field and coast is rare in a single source.

How to set yourself apart with this

Put the origin on the menu and let season lead. A whole Breton artichoke in spring, roasted cauliflower in winter: these are dishes built on product, not technique. Name Brittany outright, because the guest who knows the coast gets it immediately.

Chef’s tip

The salty coast isn't just in the vegetables. From the same region comes seaweed: salted wakame and sea lettuce. Rinse briefly, chop fine and work through a beurre blanc or over steamed fish. You trace the line from plate to source without needing to explain a thing.

Whole artichoke, cold

Large Breton artichoke cooked and cooled, with a vinaigrette of shallot and mustard. Leaf by leaf, classic and unfussy.

Cauliflower from the grate

Thick slices of cauliflower charred on wood fire, finished with brown butter and capers. The open-field richness that greenhouse cauliflower never has.

Leek in the embers

Whole leek cooked in glowing embers, then peeled and dressed with a sauce of sea lettuce and lemon. Smoky against salty.

Chervil root, glazed

Winter chervil root glazed in butter, anise-like and sweet. Beautiful under game or next to firm fish.
