Who's behind it

Oostdam is a dairy farm on J.C. Hoogendoornlaan in Bodegraven, in the heart of the Groene Hart. Yvonne and Jorden Oostdam run the farm, son Niels is part of day-to-day management and son Erwin helps where needed. They keep 130 cows of various breeds and milk out around 3,500 kilos of milk daily.

In 2020 they started their own mini dairy under the label Oostdam Dairy. Since then they've been processing part of their own milk on the farm, from cow to bottle at a single address. The motto on the yard is straightforward: Long Live the Cow.

What truly sets them apart

Processing happens with a Lely Orbiter, a system that processes and packages milk immediately after milking, around 300 litres per hour. There's barely any time between cow and bottle. With the full milk they add nothing and remove nothing. That same principle carries through to the cream: functional dairy with no unnecessary additives.

For you as a chef that means a product that does predictably what you expect. The cream whips as it should, binds in warm preparations and holds its flavour instead of splitting quickly. The farm is large enough to deliver consistently yet small enough to monitor each batch for fat content and behaviour. So you don't get a different product each week.

The location helps. The Groene Hart is classic dairy and cheese country, and the milk comes from the immediate area. The chain is short and traceable to a single barn.

How to set yourself apart with this

For most kitchens, cream is anonymous product from a carton. Here you can specify exactly on the menu where it comes from: one farm, one region, processed within an hour of milking. That's a story that holds up the moment a guest asks.

It works just as well practically. Cream without a stack of additives gives you more control over your sauce, your reduction and your pastry, and a cleaner base flavour in ice cream and panna cotta. You build your dish on a raw ingredient whose provenance you can show, from beurre blanc to dessert.
