Mouneyrac Frères

The Granny Smith is the most predictable apple in your kitchen, and that's exactly why you want it. From Mouneyrac comes a French fruit grower who's been at it since 1928.

Who's Behind It

Mouneyrac Frères has been in fruit since 1928. A French family business that grows apples and pears and distributes the harvest via the Marché de Rungis, the big produce market under Paris where buyers are moving all night. Nearly a hundred years later, it still comes down to the same thing: fruit picked for flavor, not the calendar. Alongside the classic Granny Smith, they grow rarer varieties like the Patte de Loup and an organic line. The orchards are managed ecoresponsibly, with fewer inputs and more attention to soil and tree. For you, that difference is concrete: not anonymous import from a container, but grower's fruit with a name on it.

What Really Sets It Apart

Bright green, hard, high acidity. Where sweeter varieties collapse the moment they see heat or acid, the Granny Smith holds its bite and its sharp-fresh punch. That makes it the workhorse apple under the fruit. At Mouneyrac comes grower quality on top of that: picked at ripeness, sorted by size, with an acidity that stays consistent box to box. That saves you at the pass. An apple that doesn't turn mushy in the pan and doesn't brown away on the plate does more work in a kitchen than its kilo price suggests. The Patte de Loup alongside is an old variety with a rough gray skin, smaller and nuttier than the Granny. Two apples, two roles: one tight and tart for structure, the other aromatic for someone who wants something special on the menu.

How You Stand Out with This

A green apple on your menu reads dull. The execution makes the difference. Use the acidity as a tool: grated raw over fatty fish, as a granité against foie gras, or as a remoulade that lifts your richer course. Because the acidity is consistent, you can dose by flavor without having to adjust every time. Name the origin on the menu. "French Granny Smith from grower Mouneyrac, since 1928" tells the guest the apple is a choice, not leftover. Want to push further, spin the Patte de Loup as a seasonal surprise: a variety your guest doesn't see at the supermarket, and that opens the conversation at the table. That way under an everyday name sits something nobody can taste past.

Chef’s tip

Grate a raw Granny Smith right before plating over a rillette or a fatty fish. The acidity cuts through the fat without needing to add lemon. Leave the skin on for color and bite.
