Hoogendijk winter carrot from Wieringerwerf

Straight, deep orange carrot from the Wieringermeer clay, harvested only when it's firm and sweet enough. A core that doesn't turn woody and a grower who knows his varieties inside out. Reliable winter carrot that works just as well raw as it does cooked on your plate.

The story

Who's Behind It

Hoogendijk Agro sits in Wieringerwerf, right in the Wieringermeer. That's reclaimed polder, and the fertile clay ground underneath is exactly where carrots take root well. The business grows about 40 hectares of carrot and has an own wash facility that processes between 50 and 130 tons of roots a day. That's not hobby scale, but it's also not an anonymous factory: it's a grower who knows his soil and his crop inside and out.

What stands out in the approach is the no-nonsense attitude. Hoogendijk works with varieties like Bangor, Bergen, Nerac and Narbonne, types that have been around for ten years or longer. No experimentation for its own sake, but varieties he knows how they perform on this soil and in storage. At the same time, he keeps looking for a harder carrot that can take a knock, because the costs of purchase, storage and transport keep climbing. Knowledge of the crop and consistent quality: those are the two reasons we source carrot here.

What Really Sets It Apart

The difference sits in the judgment of harvest timing. Hoogendijk works with the soil, not against it. The carrot gets the time and only comes out of the ground when it's firm and sweet enough. No forced growth, no shortened growing cycle to deliver earlier.

You taste and see that. The carrot is straight and deep orange, and the core doesn't turn woody. That woody heart is exactly what gives away an ordinary winter carrot: you cut it away and have less left. Here the whole carrot stays usable, from outside to core. Firm enough to process raw without turning soft, sweet enough to stand on its own cooked.

How You Stand Out with This

Winter carrot is something everyone has, and that's exactly why it stands out if yours is better. Don't relegate it to a side dish but give it a starring role: whole roasted carrots with the sweetness as the flavor maker, or a raw carrot salad that still has bite an hour later.

On the menu you don't need to waste many words. Name the origin and let the product do the work. One reliable carrot that handles both the oven and the raw board also saves you on ordering rules and handling in the kitchen.

Chef’s tip

The core stays tender, so you don't need to peel away a woody heart. Roast thick slices or halved carrots on high heat until the sugars caramelize, or slice it raw into fine julienne for freshness and bite. One carrot quality you can take two ways.

How to use it

Ideas for your menu

Roasted winter carrot, whole trunk

Halved lengthwise, roasted on high heat until the edges caramelize. The carrot's own sweetness, no sugar needed.

Raw carrot salad

Fine julienne with citrus and herbs. The firm structure holds its bite, even an hour after dressing.

Smooth carrot soup or purée

The deep orange color and full flavor give color and body without needing to tint it.

Carrot from the oven with dairy

Warm carrot against labneh or strained yogurt, some acid and nuts. A simple plate that leans on product quality.
