Who's Behind It

Farm Fields sits in Wekerom, in the heart of the Veluwe. The business switched to closed-loop farming in 2006 and has kept the whole chain in house ever since: own pastures, own fields and an own slaughterhouse on the property. Some of the calves come from organic dairy farms in the region. The slaughterhouse works small-scale, with meat aging on location, heat exchangers and solar panels. Alongside veal and lamb there's an own vineyard.

What Really Sets It Apart

It comes down to the animal. With regular blank veal, calves stay inside on a milk diet. That gives pale meat with low iron and little flavor. Farm Fields' calves go outside daily and graze summers on own pastures and on Natuurmonumenten and Hoge Veluwe grounds. They get mother's milk in the first weeks. Their feed consists of grasses, corn, barley and peas, partly self-grown without chemical pesticides and artificial fertilizer, with their own farmyard manure cycled back to the land.

You read that in the meat: rosy in color, finely marbled and tender, with the grass flavor you don't find in blank veal. Farm Fields is recognized as a Veluwe regional product. The lamb goes a step further and is organically certified (EKO).

How You Stand Out with This

You have an origin here that holds up and that you can put on the menu: birth, pasture time, feed and processing all come from one property in Wekerom. For the chef, that means a story that traces back to the pasture, and meat that looks different from what the average guest expects from veal. The rosy color of the vitello and the diamond muscle does its work immediately on the plate. If you're going all-in on pasture time and organic, set Farm Fields alongside regular veal and show the difference instead of explaining it.

Chef’s tip

Veal cheek demands time: at least three hours gentle braising until the fiber falls apart. The diamond muscle does the opposite: quick and hot searing, rosy, rested, not overdone.
