Who's behind it

El Dulze Growers sits in Campo de Cartagena, in the southeast of Murcia. This is the dry, sunny corner of Spain where lettuce grows outdoors almost year-round. The business cultivates approximately 2,000 hectares itself and works with about 500 people. Around 150,000 heads of lettuce leave the warehouse daily, year-round.

That year-round delivery is no accident. El Dulze spreads cultivation across seasons: fall and winter in Murcia, Almería and Alicante; summer in the higher-altitude Albacete. That way, harvest continues without supply gaps. The business is recognized as a growers association by the region's agricultural authority.

What really makes it different

El Dulze built its own robotics over just over twelve years, run by an internal team of 24 programmers. The forklifts in the warehouse drive autonomously. More important for you: they automated cutting and trimming of little gem hearts—something they say they did first. That means heads that are sorted by size and color before they go in the box.

You notice it in the kitchen. The heads are homogeneous: comparable size, comparable weight, a tight-sealed heart. That's precisely what makes lettuce as a plate component tricky. Soft or uneven iceberg lettuce falls apart on the grill and gives unpredictable portions. A tight Roman heart holds its structure, even halfway through grilling or blanching, and cuts clean into wedges.

Little gem and Roman lettuce are the same type here: a compact romaine with thick, crisp leaves and a sweet core. Little bitterness, plenty of bite.

Treat this lettuce as a vegetable, not as garnish. The heart handles heat, so you can grill, blanch, or braise it and still have texture. That opens dishes impossible with regular lettuce: a warm lettuce heart alongside meat, a grilled half with anchovies and Parmesan, a Caesar where you use whole leaves as spoons.

For the guest it's recognizable but just different. Everyone knows lettuce; almost nobody expects it warm from the grill with a smoky edge and a crisp heart. Chef’s tip

Halve the heads through the heart and lay them flat on a hot griddle, cut-side first. Two minutes until they mark, then straight off the heat. The heart stays crisp, the outer leaves get smoke. Won't work with soft iceberg lettuce.
