The story
Who's behind it
Market garden De Waog is in Neer, along the N273 in central Limburg. Joep van de Bool runs the business, the third generation on this land. His grandfather started a mixed farm after the war; his parents Wiel van de Bool and Trudelies Dorssers switched to organic in 1981. Joep joined in 2012 and expanded it to 50 hectares with 40 to 50 crops per year. Four permanent staff keep things running, supplemented by 10 to 15 seasonal workers in spring and summer. The produce goes through health food shops, supermarkets, restaurants and their own farm shop.
What really sets it apart
De Waog doesn't play it safe. The business deliberately grows a broad range of crops and continuously experiments with varieties not standard in the Netherlands. The clearest example is the sweet potato: it's been there since 2014 and now covers 12.5 hectares. Because no machine existed that could properly harvest this crop on Limburgian soil, De Waog worked with a Danish manufacturer to develop their own harvester. Alongside sweet potato, courgette, chard, pumpkin in multiple varieties, watermelon and yacon are part of the rotation, with leafy crops, cabbage, onions and leeks as the base. Cover crops like grains and clover keep the soil healthy. Everything is grown organically, with soil health as the starting point. That also explains the flavour: crops that get the time and soil they need.
How to stand out with this
You get Dutch organic vegetables with an origin you can map: one grower, one village, a cultivation you can explain. The pumpkin varieties—Crown Prince, Ushiki Kuri, green Hokkaido and Sweet Dumpling—give you four flavours and textures instead of one generic pumpkin. The orange and purple sweet potato play off each other on the plate, in colour and in sweetness. And because De Waog grows close to home, the harvest gets to you quickly, without going through an anonymous chain. Ask about the season: the offer shifts each month, and that movement itself is what lets you show a fresh menu. Add the name and village, and then the work in the soil does its job on the menu too.
Chef’s tip
The orange sweet potato is your workhorse for puree, fries and oven. The purple variety holds its colour only with short, hot cooking: roast high and fast, then the plate stays violet instead of grey.
